Oyster Stew

This is great stuff.  Rich and creamy with a great seafood taste.  Try substituting leeks for the onion.

Serves: About 4 cups

2 to 4 tbs. Butter
1/2 tsp. Grated onion
1 sliver garlic
1-1/2 pints Oysters with liquor
1-1/2 cups milk use whole milk
1/2 cup cream
1/2 tsp. salt
1/8 tsp. White pepper or paprika
2 tbs. Chopped parsley

1. Combine the butter, onion and garlic in the top of a double boiler over (not in) boiling water.
