Mushroom Druxelle

1/2 pound

mushrooms

2 tbs

shallots, finely chopped

2 tbs

butter

1 tbs

oil

 

salt and pepper to taste

  1. Sauté the shallots in the butter and oil mixture over medium heat till golden.
  2. Add the chopped mushrooms and increase the heat to high.
  3. Sauté till the juices are evaporated.
  4. Remove from the heat and season to taste.
  5. If using in Beef Wellington let cool before using.
