One-Pot Short Ribs

3 lb.

Beef short ribs or 1-1/2 lb. Rump roast cut into stew sized pieces

1

medium onion chopped

3 cups

water

2 tsp.

Paprika (mild)

2 tsp.

salt

1/4 tsp.

Black pepper

3 tbs.

Teriyaki sauce

large potatoes, peeled and sliced into 1/2" slices

1/2 cup

barley (optional)

  1. Combine the beef, onion, water, paprika, salt, black pepper, and teriyaki sauce in a large pot and bring to a boil. Reduce to a simmer and cook for 1-1/2 hours.
  2. Add the potatoes and barley. Return to the boil. Reduce to a simmer and cook for an additional hour stirring occasionally. Add water if necessary.
